Moody Tongue Sushi and Palm Beach Meats team up for Father’s Day pairing

Two Michelin-recognized culinary destinations are joining forces this Father’s Day weekend to offer an elevated dining experience centered on premium wagyu beef and expertly curated beer pairings.
Moody Tongue Sushi at Hilton West Palm Beach and Palm Beach Meats will present a 10-course wagyu tasting menu on June 19 and 20, showcasing a series of chef-driven dishes paired with specialty beers from the acclaimed Moody Tongue Brewing portfolio.

ranging from delicate nigiri and handrolls to richly flavored hot dishes. Each course has been thoughtfully paired with a beer selected to complement the flavors and textures of the menu.
Guests will begin the evening with Wagyu Daikon featuring spicy daikon and ponzu paired with a Toasted Rice Lager, followed by Torched Wagyu served two ways — with lemon and sea salt, and with soy sauce and wasabi — accompanied by a Sudachi Lager.
Additional courses include Wagyu Gunkan topped with chili crisp and quail egg yolk, Wagyu Nigiri with shio koji, and Shabu Shabu Wagyu served with mizuna salad and sesame dressing. Later offerings include Spicy Miso Wagyu, Chimichurri Wagyu and a Wagyu Uni Handroll featuring Hokkaido uni.
The tasting concludes with Matcha Tiramisu paired with Moody Tongue’s 2022 Bourbon Barrel Aged 12 Layer Cake Imperial Stout.
The event brings together two culinary brands recently recognized by the MICHELIN Guide. Moody Tongue Sushi earned a 2026 MICHELIN Selection, while Palm Beach Meats received a 2026 MICHELIN Bib Gourmand designation for offering exceptional food at a great value. Moody Tongue’s flagship brewery and restaurant in Chicago remains the only brewery in the world to hold a MICHELIN Star.

The Father’s Day tasting menu is priced at $225 per person, with an optional beer pairing package available for an additional $55.
