Moody Tongue earns Michelin recognition

Moody Tongue Sushi in West Palm Beach was named a Michelin Selection in April at an Orlando ceremony unveiling the 2025 Florida Michelin Guide additions.

The Hilton West Palm Beach location, which opened in January, is the first permanent Florida site for Moody Tongue Sushi.
Brewmaster Jared Rouben and executive sushi chef Hiromi Iwakiri attended the Orlando ceremony to accept the honor. Moody Tongue’s Chicago brewery holds a Michelin Star, and its New York sushi location also has a Selection designation.
“I am grateful to be honored alongside such talented chefs and restaurants,” Iwakiri said. “We are humbled to be included in the inaugural Michelin Guide for The Palm Beaches.”
Moody Tongue Sushi in West Palm Beach offers a 13-course omakase journey that highlights a commitment to the freshest seasonal ingredients. Each course is accompanied by a curated beer pairing, a hallmark of Moody Tongue’s approach.
Inside the newly renovated Hilton West Palm Beach, the restaurant features a cozy

atmosphere with a traditional 14-seat omakase counter and banquette seating. The menu’s pairings include Hokkaido sea scallop with edamame and Ossetra caviar alongside a Pressed Asian Pear Saison; Madai with Florida orange zest and sea salt matched with an Orange Blossom Belgian Blonde; and a Florida stone crab hand roll with charred pineapple and sauce dijonnaise complemented by a Cherry Oud Bruin.
With deep knowledge of cooking and brewing, Rouben crafts beers with a chef’s precision, resulting in balanced brews with complex flavors and aromas. The restaurant also offers a curated selection of Japanese whiskies, wines and sake. Rouben has developed a special West Palm Beach Pilsner, exclusively available at the Hilton West Palm Beach.
The omakase menu is $145; the beer pairings are $75. Reservations are required.
